Have you ever wondered what high fructose corn syrup, Monosodium Glutamate (MSG),  hydrogenated oil, trans fats and nitrites are; and what these additives and preservatives have done to you and your families health.
Thirty years ago high fructose corn syrup began to replace sugar.  Since that time there has been an unprecedented increase in type 2 diabetes and obesity. The scientific reason behind the detrimental effects of high fructose corn syrup to health are being studied in detail at numerous universities. Simply put:
When we eat glucose our cellular energy (ATP) increases and we no longer feel hungry. However, when we eat high fructose corn syrup our cellular energy (ATP) falls, despite having eaten. This makes us feel hungry and we eat more creating the cycle of overeating and craving that ultimately leads to obesity.
Trans fats are also unnatural. In non-modified food sources fat exists in the chemical orientation that is referred to as “cis.” When the fat contained within food is modified its chemical orientation known as steriochemistry is altered and “trans” bonds are formed. These bonds can’t be broken down by the human body. The enzymes and chemical pathways that convert food into energy can’t convert trans bonds into energy. This ultimately results in trans fats being stored as fat in our bodies.
Monosodium Glutamate (MSG), is another chemical wildly found in processed food. The disturbing fact about MSG is its chemical similarity to Glutamate, a neurotransmitter that sends signals across synapses, spaces between neurons. In scientific studies it was found that MSG induced lesions of the hypothalamus and excessive weight gain in lab mice.
Nitrates are commonly used as a preservative for meat containing products. In one environmental study it was found that areas that have high nitrate concentration in drinking water have a higher presence  of stomach cancer.
Even though we are beginning to realize that many of these additives have adverse effects to our health it is almost impossible to prepare food that does not  contain one or more of these additives. The staples that we use in cooking such as, condensed soups, prepared spices, refined sugars, etc. are filled with these additives and preservatives. Our food, our cleaning supplies, and personal hygiene  products are also filled with chemicals that we are only first starting to understand the adverse effects of.
